MMPs are Zn-dependent proteases. All MMP types are multidomain proteins and their activity is controlled by tissue inhibitors of metalloproteases. Synthetic and natural inhibitors are used to prevent pathologies caused by MMPs. This review discusses MMP attitudes and chemical and physical factors that may affect MMP activity and synthesis, such as caffeine (a snake venom component), melatonin, serotonin, stress factors, and vitamins E and C.
